Chicken & Vegetable Frittata

Upgrade your morning eggs with an easy Frittata that uses many ingredients you have lying around in your fridge. The addition of Chicken makes it a hearty and nutrient dense meal.
DIRECTIONS
Start by cooking the Mina Halal Chicken Shawarma per package instructionsFinely dice the onion and the bell pepper, and slice the mushrooms
In an oven safe pan, cook the onion on medium heat with the vegetable oil for a few minutes until translucent. Add the bell pepper and mushrooms and cook for a further 5 minutes until all vegetables are soft
Add the spinach and the salt and cook for a few minutes until spinach is wilted. Add the Chicken Shawarma to the vegetables
Crack the eggs in a bowl and mix well, adding salt and pepper, then pour the eggs into the pan evenly and allow to cook for 3-4 minutes on medium heat
Broil the top of the Frittata for a few minutes in the oven until egg is no longer runny
Crumble the feta on top and serve with a side salad or bread

½ box Mina Halal Chicken Shawarma
½ Onion
½ Bell pepper
2 Cups (500 mL) packed spinach
1 cup (250 mL) sliced mushrooms
2 tbsp (30 mL) vegetable oil
¼ tsp (1 mL) salt
3 tbsp (45 mL) crumbled feta
5 eggs
For the eggs:
¼ tsp (1 mL) salt & sprinkle of pepper (or to taste)
½ Onion
½ Bell pepper
